  3. Hi The Haute Host: two little secrets to these special cookies: undercook and take out of oven before they brown...finish cooking on baking sheet for a couple of minutes.

    Also, using the vegan buttery spread mentioned in this recipe (rather than butter) seems to create a very soft middle to this cookie (not hard and crusty all throughout the cookie.) Only crunch on outer portion of cookie.
