How do you make a favorite comfort food a little healthier? Without losing texture and flavor, all you have to do is switch from using ground beef to a good quality ground turkey, of course! That said, you will need to spice the turkey balls up with add-ins or cooking them in a flavored sauce. Update to this recipe: A wonderful pairing of flavor is to add White Horseradish and Sweet Pepper Relish. Yum. Note: I use Gluten-free Horseradish.

The first time I prepared a ground turkey dish was tossing the rounded balls of fresh ground turkey and cooking them in a spicy, sweet and sour sauce in a large pot on the stove top. These were a big hit with guests and of course the turkey balls with sauce partnered well with rice or couscous for a complete plateful.

To cook a very simple, tasty version of turkey balls, I prepared fresh ground turkey with ingredients as if preparing a meatloaf. Everyone has their own version of meatloaf, but I find using Panko Bread Crumbs to be an ingredient giving a meat or turkey mixture some body so the compacted meat does not become too dense. By baking the seasoned ground turkey balls, one saves some calories by avoiding a frying process for cooking.

These baked ground turkey balls can be served as an appetizer with a favorite dipping sauce or served as a main dish along side of a healthy carb and a side salad. Either way, these tiny balls of comfort are satisfying to the palate and are fun to eat.

Basic Recipe:

What you will need:
Lage mixing bowl
Small mixing bowl
Fork or Whisk
Wooden spoon
Lage baking sheet
Parchment paper
Spatula or cooking tongs
Pot holders
Large serving platter or large serving bowl

Ingredients:
Fresh ground turkey, one pound
One whole egg OR Two eggwhites
Ketchup, 1/4 cup
Worcestshire Sauce, 1/4 cup
Kosher salt, one teaspoon
Black pepper, one teaspoon, crushed
Smoked Paprika, one teaspoon
Panko Bread Crumbs, 3/4 cups or more for consistancy to form balls
Optional: add an herb or choice or chopped, fresh spinach
Update to recipe:
Horseradish, white, 1/4 cup (or more for personal taste.)
Sweet Pepper Relish, 1/4 cup (or more for personal taste.)

The Cooking Process:
Preheat oven to 350 degrees F. Cook turkey balls for about 20-30 minutes until they are slightly browned. Do not overcook or they will be too dry.

With the fresh ground turkey in a large bowl, add a well-mixed egg (or only eggwhites) from the small bowl that has been mixed with the fork or whisk.
To the turkey egg mixture, add the remaining ingredients and mix with the wooden spoon to a consistancy to form a small ball with clean heands.
Continue to form balls of mixture and put them on a lined baking sheet with parchment paper.
Put the baking sheet into the preheated oven to bake.
Check often to make sure the turkey balls are not browning too much.
When the turkey balls look browned on the top, shut the oven off and remove the baking sheet from the oven.
Remove the turkey balls on to a clean platter.

Steak and Summer Salad

Imagine being a newlywed couple about to celebrate your first wedding anniversary. Your first year of marriage included new jobs, grad school and a recent move into a new apartment. Ah, more space to live in and a shiny new kitchen with stainless steel appliances.

When and what will be the first homecooked meal after the unpacking? With pots and pans and small appliances all set to perform culinary magic, the inspiration came for Alexa to surprise her husband, Rob, with a juicy steak. Who wouldn't hurry home with that vision stimulating the tastebuds?

Along with the mouthwatering protein as the star on the dinnerplate, the supporting side of a fresh, summer salad completes the show.

The first homecooked meal in the new apartment was a huge success! Here is how the magic began with Alexa creating a marinade of flavor sensations for the awaiting steak.

As I like to say, "Nobody in the world is eating this meal. I created it just for you." This steak dinner is the homecooking-magic Alexa prepared for her husband, Rob.

The Souper

What you will need for this meal:
Fresh steak, cut of choice
Large plastic ziplock bag for marinating the steak
Measuring cups and measuring spoons
1/4 cup Teriyaki Sauce
1/4 cup Worcestershire Sauce
1/2 teaspoon garlic, crushed or minced
One teaspoon cinnamon
1/2 teaspoon red pepper flakes

Kitchen supplies and utensils:
Tongs
Large frying pan or grill pan. (Option, outdoor grill)
Large platter for cooked steak
Aluminum foil for covering the cooked steak on the platter
Large salad bowl
Wooden salad utensils
Vegetable peeler
Kitchen knife
Serving fork for cooked steak

Add the steak and seasoning ingredients mentioned above into the large ziplock bag, close tightly, and shake all the ingredients completly to cover the steak.
Place the ziplock bag with the marinating steak into the refrigerator for about an hour before grilling.

Cooking process:
If pan searing, cook the marinated steak on medium-high heat. Medium-rare will take about 4-5 minutes per side depending on the temperature of your stove-top burner. Option: grill the steak on an outside bar-b-que grill on medium setting for heat. Check the steak often to see how it is cooking.

Testing doneness of meat: Press your finger into the center of the cooking meat. If your finger dips into the center it is cooked very rare. If your finger does not dip into the center of the cooking meat, the meat is well-done. Anywhere in the midpoint of dipping your finger into the cooking meat will mean medium-rare to medium-well doneness.

When the steak has been seared or grilled to your liking, pick up the cooked steak with clean tongs and put the steak onto a large platter. Cover the cooked steak with aluminum foil so that the steak will rest, allowing the juices to settle back into the meat. Rest the steak on the platter, covered with aluminum foil for about 20 to 30 minutes.

While the steak is resting, prepare the summer salad:

Ingredients for this salad are:
Romaine lettuce, 2-4 large leaves, enough for two people.
One carrot, shaved
Fresh cherries, pitted and sliced (amount is up to you)
Cranberries, dried (amount is up to you)
Avocado, cut in half and taken out of covering, cube the flesh of avocado
Feta cheese, fat-free (optional)

Combine all the ingredients for this summer salad into a large salad bowl.

Dressing for summer salad
Pyrex glass dish or bowl, safe for microwave oven
Large spoon or whisk
Extra Virgin Olive Oil, 1/2 cup
Balsamic Vinegar, 1/4 cup
Orange Marmalade, 1 tablespoon

After putting the above indredients for the salad dressing into the Pyrex glass dish or bowl, whisk gently to blend.
Take the whisk out and put the Pyrex glass dish or bowl into the microwave oven for just about five seconds, on high setting. This will heat the ingredients a little in order to blend better. After taking the Pyrex glass bowl or dish out of the microwave oven, use the whisk to blend the indredents again.

Just before serving the summer salad, pour the dressing over the salad and mix lightly with wooden salad utensils.

To plate the meal:
Slice the steak and put a few slices on an individual dinner plate. Serve a portion of the salad along with the steak on the same dinner plate.

Steak Tips On Grill The Easy Way

Tonight is going to be a meat night. After lots of fish and chicken, sometimes one just enjoys a meat meal. During summer months, what is better than grilling some steak tips? Are you ready for this simple recipe? You will not be disappointed.

Prep: Purchase a good quality cut of meat for steak tips. If not labled at your supermarket, ask the butcher behind the counter to assist you. Have a cutting board used for meat, a sharp knife, a clean plate to bring steak tips to the outdoor grill and another clean plate to bring the cooked steak tips to your dinner table. You should also have a a grill brush, mesh grill rack, oiled or sprayed with olive/canola oil to keep the steak tips from sticking. Suggestion: if your steak tips come in strips, cut them into large cubes for quicker cooking. Don't forget a pair of tongs to turn your pieces of meat. An oven mitt is helpful as well.

Grilling: You do not need to season or marinate good cuts of meat. Do not even salt them first because they will loose their juice. After preheating your grill, using your grill brush to clean the grill, lower temp so meat does not burn. Put the mesh grill with the meat on the heated grill. Turn the pieces of meat when you have them cooked to your liking.

Serving: After the cooked meat is put onto a clean plate, sprinkle some Kosher salt and pepper, let the meat rest on the plate for a few minutes before eating. Cover lightly with foil. This resting time allows for the meat juices to redistribute back into the cooked meat. While the meat is resting, prepare a tossed salad to go along with your steak tips. Additional steamed or grilled veggies is added nutrition to your meal. If you prepare enough steak tips and salad you then have another meal for the next day: cook once, eat twice!

Optional: If you desire to marinate your steak tips before cooking, put the meat cubes in a large plastic food bag and add: olive oil, redwine vinegar, Worcestshire Sauce, Kosher salt and crushed pepper. Some people like to add ketchup also. Dried herbs can be added such as Tarragon and Rosemary. Close the plastic food bag after all ingredients are sealed inside and shake/turn the bag to distribute the marinade. Put the bag into the refrigerator for 15-20 min. Drain and put the cubed steak tips on a plate ready to bring to your grill. Follow grilling instructions above.

You will be amazed at the taste of good cuts of meat grilled in this simple way. No need to dump lots of sauce on them. The true flavor of the grilled steak tips will be pleasing to your palate, I am sure.

Hamburger Stretch

It is possible to get five burgers from one pound of ground beef by adding some flavor. Depending on the servings for yourself or your family, this is an economical way to stretch food on a budget. Cooking for two? You then have lunch the next day or two.

Prep: Purchase a good quality ground beef. Bring out one egg, ketchup, Worcestshire Sauce, salt & ground pepper, bread crumbs or Panko crumbs (crispy, Japanese crumbs). Optional: add chopped onions, green/red peppers, chopped baby spinach. Have your chopping board and sharp knife ready along with a large bowl. A smaller bowl for cracking open the egg. Also have a clean plate ready to put the formed burgers on before cooking. (Can prepare formed burgers uncooked, keeping them covered with plastic wrap in the refrigerator for an hour or two.)

Mixing ingredients: No measuring required. With clean hands, put the ground beef in a large bowl. Crack open the egg in a smaller bowl to make sure the egg is fresh, then put the egg on top of the ground beef. Continue to add the rest of the wet ingredients, then the veggies, saving the crumbs for last for the desired consistency. When using the wet ingredients, use amounts that you feel comfortable with a few shakes at a time. The ground beef should be loose a bit. After adding some crumbs, use your clean hands to gently blend in all the ingredients.

Make hamburger patties for your desired size burger, putting them on a clean plate to transfer to a frypan or outdoor grill. Be sure to use a spray Canola oil for frypan or grill rack. (Canola oil can be brushed in a pan or on a grill. Canola oil holds up to a high heat. A vegetable oil also, but olive oil requires a lower heat.)

Important point when cooking burgers: Do Not Press Down with a Spatula. This will release juices and make a very dry burger. A simple test for doneness in meat is: press a clean finger gently to the center. The firmer the meat, the more well done the meat is. A medium well burger is done with just a little press in the center.

Serving tip: Allow cooked burgers to rest a few minutes on a clean plate before serving. Use this time to have desired condiments available at the table to build your custom burger. If using a bun, add some fresh lettuce or baby spinach (washed), have sliced tomatoes available to include veggie servings during your meal. Or serve a burger on a plate with a side salad.

With a tasty, custom burger prepared at home, you will not miss a take-out burger and will WOW your family and friends. Your burgers will be healthier prepared with the control you have over the ingredients you put into your food.
